Easter Stained-Glass Cookies


Ingredients:
140g Unsalted Butter (soften at room temperature)
30g Trehalose
40g Icing Sugar
1 Egg
1 tsp Vanilla Extract
325g Cake Flour
½ tsp Baking Powder
Fox’s Hard Candy (crushed)

Icing:
100g Icing Sugar
3 tbsp Egg Whites
Food Coloring

Preparation Method:
1. Mix unsalted butter, trehalose and icing sugar with the kitchen machine. Mix with the stirring whisk until soft.
2. Stir in the egg and vanilla extra.
3. Sift the cake flour and baking powder. Add into the mixture and mix well to form a dough.
4. Cover the dough with plastic wrap. Roll into 5mm thickness.
5. Cut the cookies with a cookie mold (cut away the centre of the cookie dough). Fill the centre with crushed candy.
6. Use the PerfectBake function to bake until golden brown.
7. Let cool after removing from the oven. Set aside until the crushed candy sets.
8. Mix icing sugar with egg whites. Add food coloring and place into a piping bag. Garnish the cookies with the icing mixture and set aside to dry.

Tips: The Glycemic index of trehalose is lower compared to granulated sugar, which makes it healthier. It can be purchased in bakery stores and large supermarkets.
