Mint Pesto Scallops

Ingredients:

  • 30g mint leaves
  • a few Italian flat-leaf parsley
  • 20g + 10g toasted pine nuts
  • 1 clove garlic, peeled
  • 30g grated parmesan cheese
  • 60ml extra-virgin olive oil
  • a small knob of butter
  • 1tbsp olive oil
  • 8 large scallops, rinsed and patted dry
  • salt and pepper

Method:

Attach food blender to Bosch MUM5 Styline Kitchen Machine via the multifunction arm. Blend mint, parsley, 20g pine nuts, garlic, cheese and extra--‐virgin olive oil until well combined. Season with salt and pepper.
In a frying pan, melt butter and olive oil. Pan fry scallops until cooked and lightly browned on both sides. Drain Excess oil on paper towel.
To serve divide and spread pesto on top of each scallop. Drizzle extra--‐virgin olive oil and sprinkle over the remaining pine nuts before serving.
