Tomato Jam

Ingredients

  • 2 red onions
  • 2 tbsp garlic
  • salt
  • black pepper
  • 4 tomatoes (ripe)
  • 1 cup of white wine
  • 1 tbsp olive oil
  • 3 tbsp of sugar

Method

First, slice onions into bite size.
Put the garlic into the Bosch ErgoMixx Handblender. Blend them at low speed.
Cut the ripe tomatoes into four and put them aside.
Heat up the pan. When it’s hot, add a little olive oil. Throw in the onions and the garlic (2 tablespoons). Lastly add in the tomatoes.
Add some white wine (Moscato or Riesling). Let it cook for around 10 to 15 minutes until the ingredient mix is soft and mashed up.
Using the ErgoMixx hand blender, mix all the ingredients in the pan. Add some sugar and then slowly cook the tomatoes until it’s almost dry. Lastly season it with a pinch of salt and pepper.
Tip: To check if you have the right consistency for the jam, put a spoonful of it onto a plate. Using the same spoon, spread out the jam. The jam mixture should just coat the plate.
