Steamed Crab with Egg White and Shaoxing Wine


1 blue crab (flower crab) 60g egg white
150ml milk 50ml chicken stock
2 tbsp Shaoxing wine (Hua Diao) 1/4 tsp salt
some pepper 1 tsp ginger (minced)
Little green onion (chopped)


1. Wash the crab and chop it into pieces. Drain well. Arrange crab pieces on a plate, and add Shaoxing wine (1 tbsp) and minced ginger. Put all in preheated 100℃ steam oven. Steam for about 8 minutes until half cooked.

2. Mix egg white, milk, chicken stock, salt and pepper. SIeve the mixture. Put aside.

3. Pour the egg mixture over the crab. Put all in preheated 100℃ steam oven. Steam for about 10 minutes until fully cooked.

4. Sprinkle chopped green onion and pour Shaoxing wine (1 tbsp) over crab. Enjoy!
