1. Mix water and yeast in a big mixing bowl then add sugar, flour, vegetable oil (5g) and knead into dough, rest in room temperature for 5 minutes
2. Dust the table with flour, roll the dough into a sheet of 35cm x 25cm, brush it with vegetable oil and sprinkle the green onion, minced ham and salt on top
3. Fold 1/3 of the dough on top of itself, brush with the rest of the vegetable oil, fold the other side on top and press the dough down, cut into 12 pieces
4. Stack up two pieces of dough, use a bamboo skewer to press the middle line lengthwise and rest for 5 minutes, repeat the steps for the rest of the dough
5. Hold both ends then stretch, hang it over a bamboo stick, hold both ends with left hand, twist the bamboo skewer with the other hand then slide it out of the dough
6. Fill the water tank with water, arrange the dough on the lined steam container then on the glass pan, place inside the oven at level 3, prove the dough with 40℃ for 20 minutes, let it set in the oven for 10 minutes, then cook with steam 3 for 15 minutes
