Pumpkin wagashi

INGREDIENTS:

250g Japanese pumpkin (peeled, seeded and chopped)
150g glutinous rice flour
40g cornstarch
250g red bean jam
50g sugar
Some pumpkin seeds
165ml water

PREPARATION STEPS:

1. In a 100℃ steam oven, steam the pumpkin for about 15 minutes until cooked.

2. While the pumpkin is still warm, add some sugar and mix well with Bosch hand blender.

3. Put the glutinous rice flour and cornstarch into Bosch kitchen machine and blend with the silicone stirring spatulas at speed 3.

4. Divide the dough into 25 portions (around 25g each), wrap the red bean jam (around 10g each) with the pumpkin dough and fashion them into small balls. Make notches on the top of a dough using the back of your knife to shape it into a small pumpkin. On top of each wagashi place a pumpkin seed for decoration.

5. Steam in a 100℃ steam oven for about 10 minutes until cooked. Serve.
