Moderate ladyfingers 500g mascarpone cheese 250g whipping cream 100g icing sugar 20g brandy or sweet wine 4 egg yolk |
Coffee mixture 2 tbsp coffee powder 1 tbsp coffee liqueur 1-2 tsp sugar Moderate hot water Cocoa powder (for garnish) |
1. Cut and place ladyfingers into small dessert cups, dizzle with coffee mixture and set aside
2. Beat whipping cream in kitchen machine at level 7 until soft peaks form, set aside
3. Whisk egg yolks and icing sugar in kitchen machine at level 7 until pale, mix mascarpone cheese in, pour brandy or sweet wine in and mix well, gently fold in whipped cream
4. Transfer the cheese mixture to a pastry bag, pipe a thin layer into the cups, add a layer of soaked ladyfingers, pipe another layer on top, keep in refrigerator for couple hours
5. Dust with cocoa powder
